Coffee Snapshots | Tom (& John) – Co-directors of Metronome Coffee & Wine
Our Coffee Shop Snapshot series showcases the people who make the coffee industry tick, and…
My whole working career has been in hospitality, mostly as a chef, i then moved to front of house and spent 5 years at Harrods in the restaurant dept, it was there i was approached by a coffee roaster to help them launch the brand in the UK. From there I set up a wholesale business of my own and have now moved into equipment and also a cafe on Savile Row.
We still have close links with that roaster so we’ve kept with them all the way through and they supported us a lot in the early days. We’ve used the same organic coffee since day one, it’s a great all rounder, plus our market is quiet traditional in the terms of favour profile.
Nothing complicated, the average customer gets scared of looking stupid when confronted with loads of technical jargon, we all know what makes good coffee, so let’s just keep it simple, wonderful coffee, warm and inviting surroundings and a great team (that do have knowledge should someone ask)….but don’t throw it down their throats!
The Service emerged from covid, it was only supposed to be a pop up to support the local area, business and residents and bring life back, Savile Row hasn’t had a coffee shop before or any other business not associated with its sartorial heritage for nearly 300 years. So the name just seemed ‘fitting’…..sorry bad pun!
Americano or whatever is on batch brew….but never with milk.
